Christmas Crunch


I know some of you probably have company headed your way soon, so I thought I would post this recipe since it is super easy and yummy.  This is a great thing to have on hand because it can be a dessert or a snack.  Perfect at home or to bring to a party.  It travels well and stays fresh for a long time.  You can throw it in a big bowl and let folks just have at it or you can package it in little baggies and tie with a ribbon for individual servings.  I used it this year as part of my Christmas basket.

Christmas Crunch:

7 cups Crispix Cereal

1 cup whole pecans

1/2 cup roughly chopped almonds

1/2 cup salted pretzels (sticks or twists)

1/2 cup light corn syrup

1/2 cup brown sugar

1/4 cup butter

1 teaspoon vanilla

1/2 teaspoon baking powder

In a large bowl mix together Crispix, nuts, and pretzels. Combined corn syrup, sugar, and butter in a microwavable dish. IMG_2279Microwave on high for 1 min.  Stir until all melted and combined.  Then add in the vanilla and baking powder and microwave for another 30 sec. IMG_2280Stir one more time and then pour over Crispix mixture.  Lightly toss until it is evenly coated.  IMG_2288Then put it into a 9×13 greased baking dish and bake at 250 for 1 hour.  Take it out and dump it over onto parchment paper.  IMG_2289Let it allow to completely cool and then break apart and serve.
