Resisting the Ease of the Drive Thru

Does anyone else struggle with meal planning and prep like I do?  If there is something that falls through the cracks, that is going to be the thing. Last week I had several of those nights.  I just wanted to jump in the car and go through a drive through so I could be done with it. On this particular night I felt really bad about that (um maybe because my kids ate Wendy’s the night before!) and wanted my kids to eat something with a little more nutrition.  I racked my pantry and fridge for something I could make quickly that would include some fruits and veggies. I came up with a broccoli and cheese omelet and pancakes with a berry compote, it took me 10 minute to make.  I thought I would share since it was quick, had fruits and veggies in it, and was a hit with my kids.  It was only semi homemade since I used microwave pancakes, but it was not from a drive thru, YAY!

Here’s how

Broccoli Cheese Omelet:

Steam 1 cup of broccoli florets then give them a rough chop

Wisk together 4 eggs, 2 tbs of milk and some salt and pepper.

Spray a pan with a little olive oil (or cooking spray) and pour it in.  Let it cook over medium high heat until the top of the egg mixture looks kinda like jello and is a little bubbly.

sprinkle in broccoli and a good handful of whatever cheese you have.

Flip half of it over on top of itself, and cut into wedges to serve.

Berry Fruit Compote:

Rinse 1 cup of frozen berries in a strainer, mine were mixed berries but you could use any kind.

Put into microwave safe bowl.  Add 1 tbs of sugar, a dash of vanilla, and 1/2 tsp flour.  Heat in microwave for 30 seconds to 1 minute and then stir/mash with a fork.

Pour this over your pancakes or waffles and it is yummy and full of antioxidants!
